Bongo
Billy's Coffees® is a micro-roaster of custom coffee
blends founded in 1994 by Bill & Cheryl Mehaffey. Bongo begins
with the highest quality specialty Arabica coffees grown throughout
the world, between 4,000 to 6,000 feet.
One of the most inspiring approaches to Bongo Billy's Coffees® is
in the way they are roasted, thanks to Bill Mehaffey's background
as a Biochemist. Bill
approaches high altitude roasting at 8,000 feet scientifically
using a process development matrix. In this matrix all of the elements
of each individual coffee and/or blend is analyzed one at a time.
High elevation roasting at 8,000 feet truly enhances the coffee
roasting process and the resulting cup characteristics you will
experience. This is because:
- Higher elevation roasting teases out the flavor characteristics
of our high mountain grown Arabica coffees.
- This slower roasting allows the natural oils and flavor
nuances hidden inside the green coffee beans to become
fully developed and brought out as the coffee beans are
carefully and passionately roasted.
